Paleo Banana Bread with Chocolate Chips

  1. Preheat oven to 350 degrees F. Lather loaf pan with coconut oil.

  2. In a small bowl combine coconut flour, almond flour, baking powder, baking soda, salt and cinnamon. Set aside.

  3. In a large, glass mixing bowl melt together coconut oil and almond butter or peanut butter (for about 1 minute on high), stir until combined.

  4. Add mashed banana, maple syrup and vanilla extract and mix.

  5. Add eggs and stir until smooth.

  6. Add dry ingredients to wet ingredients and mix until completely combined.

  7. Gently mix in chocolate chips.

  8. Pour batter into prepared pan and bake for 30-40 minutes, until top is set and a toothpick inserted in the center comes out clean.

  9. Let cool in the pan for 5 minutes before gently removing the loaf from the pan to a wire rack to cool.

  10. Enjoy!
