Strawberry Pineapple Smoothie Bowl

Serves: 2

Ingredients

  • 1 cup unsweetened almond milk, or coconut milk
  • ½ cup pineapple chunks
  • ½ cup mango pieces
  • 8 strawberries
  • 1 tbsp honey or other sweetener (optional)

Optional Toppings:

  • Unsweetened coconut flakes
  • Additional whole fruit
  • Toasted granola

Instructions

  1. This amount will make one large bowl, or two smaller bowls.
  2. add all the fruit and milk to your blender and blend until smooth. If your blender is a cheap one like mine then it will probably not work very well with frozen fruit so you will need to let it defrost a bit before you add it in.
  3. Taste and see if you need to add a little honey or other sweetener, I find that fresh fruit is sweet enough but sometime frozen fruit is a little bland.
  4. Add toppings such as dried coconut and granola.

Ingredients

  • 2 frozen bananas
  • 1 cup frozen raspberries
  • 3 tablespoons almond milk

Optional Toppings:

  • banana slices
  • strawberry slices
  • coconut flakes
  • peanut butter
  • hemp seeds
  • granola

Instructions

  1. Place frozen fruit and almond milk in a high-speed blender, blend until an ice cream like texture is achieved. Use damper stick or scrape down sides of blender as needed.
  2. Add favorite toppings and enjoy!

Ingredients

  • 1½ cup frozen mango chunks
  • ½ cup frozen pineapple chunks
  • ½ banana
  • 1 cup coconut milk

Toppings

  • ½ cup mango and pineapple chunks
  • ½ cup blueberries
  • ¼ cup coconut flakes
  • ¼ cup granola (for non-paleo option)

Instructions

  1. Add the coconut water, then fruit into a high-powered blender. Blend on high for one minute, until thick and creamy consistency.
  2. Pour into a bowl and add your toppings.
