Lavender Coconut Milk

There's just something great about making your own milk. I for one love knowing exactly every ingredient big or small that makes it into the product that I feed my family. I have found a deep love for making my own almond milk and thought it would be fun to try making my very own coconut milk! I hope you enjoy this recipe and really, everything The Whole Food Diary puts out there.

Ingredients 

2 cups organic coconut flakes

1 tbsp raw honey

1/2 tsp lavender

4 cups boiling water

instructions

Pour the boiling water on the coconut flakes and let it stand for 30 minutes.  Pour the whole lot in the blender, add the lavender and honey and blend well for a few minutes.  Pour the blended mix through a nut milk bag over a bowl and then transfer into a sealed glass jar to store in the fridge. It will usually be good for 3-4 days in the fridge.
